Steak and Eggs with Creme Fraiche

So I am still able to keep up with watching Top Chef and one of my favorite things is to try to replicate Top Chef recipes that are posted on BravoTV.com. The problem is that I can't replicate most of the recipes because of limited resources. For example, the chefs did a whole quickfire on cactus. Not available here. They did a whole challenge on pig. Not appropriate to cook in this province. A lot of the chefs use fish. Hmm, they sell fish here, but it is fish from the lakes here and they sell it to you whole and alive. I am not sure how I would tell a fish seller that I want a fillet of artic char. Also, a lot of chefs now use chemicals in their cooking. I am having trouble finding sour cream in this province, I don't have time to look for xanthan gum. Lastly, there are some basic ingredients that are not easy to find here: whipping cream, sour cream, basil, rosemary, chocolate chips, lemons, limes, wine, etc.

After going through the entire recipe list for season 6 of Top Chef, I found 3 recipes that I can make here, and then I attempted one with substitutions.

Here is the recipe with substitutions: (Also, instead of making hash browns I roasted potatoes).
For Beef:

* 1 New York strip steak, 2” thick
* Pinch of Turkish ground coffee
* Salt and pepper

For Eggs:

* 6 large eggs
* ½ cup heavy cream 1/3 cup sweet milk plus 1/6 cup butter
* 1/3 cup sour cream 1/4 cup milk, 1/4 tsp lemon juice and 1/6 cup butter
* Scallion tops, thinly sliced

The result was really good, but I guess adding butter to anything is tasty (although not so great for your health). I really like soft scrambling the eggs in a make-shift double boiler.

Hi bethany!! I became addicted to Top Chef this season, and now I see why you like it so much (even though I scoffed at the show so much before).

I'm so glad you guys can watch it over there too (there's soooo many shows I can't watch from Canada. boo!!). I'm rooting for Kevin; the 2 brothers are too annoying.

Ohhh, that looks so "yummy", Bethany. I do have a question thou, what is sweet milk (condensed milk?) and butter taste like?
