The first thing we did in class was get a lesson on Thai culture and Thai food. The Thai cooking teacher said that he couldn't remember our names, so he gave us food names. He called me "Prik," which mean Thai pepper.
Next we ground the curry with the mortar and pestle. The teacher made us say a chant while we grind:
Poke, poke, poke, (the sound the mortar and pestle make)
Tuk, Tuk, Tuk, Tuk, (a Thai form of transportation)
Ex-er-cise and, (Exercise and)
Smi-le-ing, (and Smiling)
Poke, poke, poke,
Tuk, Tuk, Tuk

Aloi Aloi (means delicious in Thai)

oh my gosh... please please please send recipes. It is so hard to find authentic thai recipes in english! I do think I can get most ingredients here but don't have recipes, and thai green chicken curry and thom kha gai are two of our faves.
